When I started writing this post and looked at the photos I was planning to upload it hit me that there was this sea of green! Without me realising, it looks like that has been the theme for the last two weeks.
One of my mini successes in lockdown has been an attempt to grow my own veg. I’ve been planning to do this for a while, especially since I’m eating a largely plant based diet now. I never seemed to have the time before but with all the closures and cancellations, I got stuck in. It’s addictive. Of course if none of my efforts actually result in any produce, I may think differently…

Ask Me Anything
I was asked to do an Ask Me Anything session on Instagram. My first reaction was to say no as I’d never done one before, didn’t have a clue how it worked and was just plain scared of the idea tbh.
I was so GREEN!
I agreed to do it. Mainly as I knew I’d be cross with myself for letting the fear of looking ridiculous (which is what it was) stop me trying something. Thought I’d share the result with you-I felt nervous and awkward but you can’t see my knees trembling!! 🤣

Cross Training – Hiking
One of my favourite activities to complement my running is hiking. In fact, it’s probably THE fave. It’s made an enormous difference to my running life. As you can obviously hike for much longer periods than you’re able to run, it’s a great way to get time on your feet and the increased endurance, experience and mental resilience that comes with that. I try to do a big hike (around 25km) once a fortnight.
My Green Soup
As I said earlier, one of the reasons I wanted to grow my own veggies was to make things like this which is packed with so much healthy stuff! You can put anything green in here-this time I used broccoli, kale, courgettes, peas and spinach.
Serves 2
1 tbsp oil
thumb sized piece root ginger, grated.
200g courgettes
100g broccoli
100g kale
100g spinach
handful frozen peas
1/2 tsp ground coriander
1/2 tsp ground turmeric
500ml vegetable stock
Put the oil in a pan and add ginger and spices. Fry for a couple of mins, adding a splash of water if it’s sticking.
Add the courgettes and broccoli and cook for 3ish mins. Add the stock and cook for a further 5 mins.
Add the kale, peas and spinach and cook for a few more mins until all the vegetables are soft.
Blend and enjoy!
