I love popping one of these in my mouth at the end of a run for a burst of lemony freshness and a much needed ginger zing! I make these energy balls quite small-roughly the size of marbles-as just a tiny bite is usually sufficient (and after all you can always eat 2-3 of them if you fancy more!)
You will need…
50g oats
200g of cashews
200g of pitted dates
2 heaped teaspoons of ground ginger
Grated zest one lemon
Pulse the oats and cashews together in a food processor then add the dates, ginger and lemon zest. Keep blending until the mix comes together in a nice sticky dough. Roll the mixture into the size balls you prefer and place them in the fridge for an hour to firm up. Store a few in an airtight container in the fridge and freeze the rest. That’s it! Super easy.
